Kagawa is widely known for Sanuki Udon, but it is also a treasure trove of both mountain and sea food.
Just like Sanuki Udon, which uses only wheat, water and salt,The true power hidden in the ingredients can be brought out by a simple manufacturing method.

We are particular about using 100% domestic bracken starch.
This bracken starch is a rare ingredient that only a few grams can be extracted from 1 kilogram of bracken.

About ingredients

  • Japan's highest peak warabi powder

    100% bracken flour from Southern Kyushu is used. Please enjoy the precious taste of pure domestic production straight.
  • Wasanbon sugar

    It has a fleeting melt-in-your-mouth texture, refined sweetness, and a beautiful milky white color. It is one of Kagawa's specialty products.
  • soybean flour

    Flavorful domestic soybeans are ground fragrantly. It goes perfectly with the smooth bracken-starch dumpling.

Discerning manufacturing method

Our bracken-starch dumplings are carefully kneaded by hand by craftsmen using a special copper pot.
A copper pan with high thermal conductivity is used,
so it takes a lot of physical strength and energy to knead it carefully so that it doesn't burn.
The warabi mochi, which is kneaded while checking with the human eye,
has an exquisite softness and elasticity that melts in your mouth.

How to eat

First, please enjoy the goodness of the simple ingredients by eating directly.
You can then add sugar as you like, because it’s finished with a light sweetness.
